Easy Veggie Dip

Seriously, who needs store bought ranch?

Ingredients

2 Garlic Cloves, medium

1/2 tsp flaked Sea Salt or Kosher Salt

1/2 c. Light Sour Cream

1/2 c. Light Mayonnaise

2 Tbsp Water

1 Tbsp Fresh Lemon Juice

2 Tbsp Dill

1 Tbsp Oregano

1/2 tsp Black Pepper Powder

To Prepare

Put the Garlic and Salt into a mortar and pestle and grind the Garlic into a paste. Set aside. In a small bowl, combine the Sour Cream, Mayonnaise, Lemon Juice and Water and stir until smooth. Add the Garlic paste and spices. Serve with your favorite fresh veggies.

Yields about 1 cup or 8, 2 Tbsp servings.

Thai Style Chicken Wings

This is a variation of one of my favorite dishes from the time we lived in Bangkok.

Ingredients

3 lbs. Chicken Wings

3 Tbsp Ginger Garlic Paste (or 9 cloves of minced garlic)

6 Tbsp Sweet Soy Sauce (found in a Chinese grocery store)

6 Tbsp Soy Sauce

1-2 Tbsp Cooking Oil (I used Extra Virgin Olive Oil)

To Prepare

Put the wings into a medium sized mixing bowl. In a small dish, combine the Ginger Garlic Paste (or minced garlic) with the soy sauces. Pour the mixture over the wings and stir until well coated. Marinate for 30 minutes.

Heat a large skillet at medium and heat the oil to cooking temperature. Cook the wings for approximately 40 minutes, turning occasionally, until the inside of the meat is no longer pink. Serve hot with dipping sauce and carrots or celery (optional).

Makes about 20 wings.

Yesterday I bought Cranberry Pumpkin tortilla chips, and I decided to make this as a dip for them.

Ingredients

1 Mango, diced

1 Small Red Onion, chopped

10 Sun Dried Tomatoes, sliced

1-2 Habanero peppers, chopped

1/4 c. Lime Juice

1/4 c. Orange Marmalade

1 heaping t. Himalayan Sea Salt

To Prepare

Mix all ingredients into a bowl.

Hummus

I added a little kick to the original Hummus recipe by substituting Chili Powder for Paprika. This can be eaten with the more traditional pita bread, or for those of you who are monitoring carbs, with raw fresh vegetables.

Ingredients

1 15 ounce can of Chickpeas (Garbanzo beans)

2 Tbsp Tahini

2 Tbsp Extra Virgin Olive Oil

Juice from 1 Lemon

1 Clove Garlic, Minced

Pinch of Red Chili Powder

Additional Extra Virgin Olive Oil for serving

To Prepare

Open the can of Chickpeas and drain the liquid into a separate container, saving the liquid for later. Combine Chickpeas, Tahini, EVOO, Garlic, Lemon Juice, and Chili Powder into a mixing bowl. Mix until smooth using a hand mixer. Add about 1/4 cup of Chickpeas liquid back into the mixture. Stir in well. Slowly stir in more liquid until the mixture is smooth in consistency. To serve, transfer the hummus to a serving dish and drizzle additional Extra Virgin Olive Oil on top.

Buffalo Wings

Classic spicy chicken wings, based on the original recipe from the Anchor Bar in Buffalo, New York. They were a hit!

Ingredients

For Chicken:

36 Halal Chicken Wing pieces (18 Whole Wings, halved into drumstick and flat pieces)

1 Tbsp Cooking Oil

1 Tsp Salt

2 Cups All-Purpose White Flour

For Sauce:

3 Tbsp White Vinegar

1 Tsp Cayenne Powder (or Chilli Powder)

1/2 Tsp Garlic Powder

1/2 Tsp Worcestershire Sauce

1 Tbsp Tabasco Sauce

1/2 Tsp Salt

3/4 Cup Cayenne Pepper Sauce

6 Tbsp Unsalted Butter or Margarine

On the Side:

Celery Sticks

Blue Cheese Dressing

To Prepare

Preheat the oven to 220 C (425 F).

If necessary, cut the Chicken Wings into halves, such that there’s one drumstick and one flat piece. Place them into a large bowl and toss with Salt and Oil. Spread the chicken pieces over a large surface and sprinkle the Flour over the top and bottom, until the chicken pieces are covered. Shake off the excess flour. Line a large baking sheet with foil. Use nonstick spray and sprinkle a bit of cooking oil on the foil, then lay the chicken evenly onto the baking sheet. Bake the Chicken for 20 minutes on one side, then turn over and bake an additional 20 minutes on the other side.

While the Chicken is baking, combine the remaining ingredients in a small saucepan. Heat on low until it starts to simmer. When the chicken is done, place it into a clean bowl, pour the sauce over the chicken, and toss and stir gently to cover. Serve with celery sticks and blue cheese dressing on the side.

Makes 36 Chicken Wings

Since we are moving back to the United States soon, I decided to treat some of my friends to some culinary nostalgia from my hometown.

Ingredients

1 package of vegetarian Ravioli, about 24 pieces

1 Egg

2 Tbsp Milk

3/4 c Italian Seasoned Breadcrumbs

Oil for deep frying

1 jar of Marinara Sauce

To Prepare

Scramble the Egg in a small bowl and stir in the Milk. In a separate small bowl place the Breadcrumbs. One by one, soak the Ravioli in the Egg-Milk mixture, then put in the Breadcrumbs bowl to coat. Set to the side on a plate or baking tray. Heat the oil for deep frying. When the oil is heated to sufficient temperature, fry the Ravioli bit by bit. I fried them two at a time, for about one minute each, turning over after 30 seconds. They should be a golden brown when done.

Heat the Marinara Sauce separately in a saucepan and serve as a dipping sauce. Serve immediately.

Baked Brie

Baked Brie

Baked Brie is super easy to make, requires few ingredients, and tastes really yummy too.

Ingredients

1 small Round of Brie

2 T Jam of your choice

1 Sheet of Filo Dough

To Prepare

Preheat oven to 220 degrees Celcius.

Spread the Jam on top of the Brie, then place it face down in the middle of the sheet of Filo Dough. Wrap the dough like you would wrap a gift, folding the corners around the Brie, sealing the seams with water. Place in the middle of a shallow baking pan. When the over is preheated, bake for about 10-15 minutes, until the dough is slightly browned. Serve hot with crusty bread.

Parmesan and Artichoke Dip

Parmesan and Artichoke Dip

This is a variation of a recipe my Mom would make whenever we had company. It pairs beautifully with crackers.

Ingredients

285 g Jar of Artichoke Hearts

1 Cup Mayonnaise

1 Cup Parmesan Cheese, Grated

2 Tsp Crushed Red Pepper, or to taste

To Prepare

Preheat oven to 170 degrees Celcuis.

Rinse and Drain Artichoke Hearts, then mash them. Thoroughly mix Artichoke Hearts, Mayonnaise and Parmesan Cheese in a mixing bowl. Add crushed Red Pepper. Spread the mixture evenly and thinly into a medium to small sized baking sheet. Bake for 20 minutes, or until it starts to brown slightly.

Variation: Top with Olives or Sun Dried Tomatoes.
