 ½ lb inch diced boneless lamb
 ¼ lb lamb liver, cut into quarter-inch pieces, veins removed
 ¼ lb lamb kidney, cut into one-quarter-inch pieces
 2 tbsp sesame oil
 4 cloves garlic, peeled and smashed
 2 scallions, cut into one-inch pieces
 salt
 1 tbsp cornstarch
 2 tbsp soy sauce
 3 tbsp rice wine
 1 tbsp sugar

Heat a fry pan, add the meat, liver, and kidney pieces and stir-fry for one minute before adding the garlic and stir-frying them together for another minute; then add the scallion pieces and pan fry 1 minute more.

Add all the other ingredients, pan fry until cooked through, then serve immediately. Serve over cooked rice, optional.
